About this drink
We start a new batch every evening at close. Coarse-ground coffee goes into cold filtered water at a 1:8 ratio and sits for eighteen hours in the walk-in, then gets filtered twice — once through cloth, once through paper.
Cold water pulls almost none of the acids that heat does, which is why this tastes deep and round rather than sharp. It is strong; if you want it longer, ask for it split with water rather than milk.
Keeping
Any batch we have not sold within forty-eight hours goes into the staff fridge, not the tap.
